Schwartz Chicken Casserole

As a mum of two preschoolers, finding the time to make tasty evening meals that the whole family can enjoy, can be pretty difficult. I find that the range of recipe mixes that Schwartz have to offer, is one of the best ways for me to create meals that are not only quick and simple but are also really tasty. The latest recipe I’ve tried is the Schwartz Chicken Casserole recipe mix. *Schwartz have gifted me (this product), but all views are my own*.

To make it, all you need is the Schwartz Chicken Casserole recipe mix, 4 chicken breasts, 2 carrots, 1 large onion, 300ml cold water and 1 tbs of oil. There are not many ingredients needed at all and most of us either have these items already, or they’re on our shopping lists!

Here’s how to make it:

  • Firstly, preheat your oven to gas mark 4/180°
  • Heat the oil and soften the sliced onion and carrots until they’re lightly browned.
  • Add the chicken and brown for around 3 minutes before transferring the pan to the casserole dish.

  • Mix together the Schwartz Chicken Casserole recipe mix with the 300ml of water and pour into the casserole dish.
    I find it best to use a fork or a whisk to mix it, to ensure it’s mixed well.

  • Cover the dish with foil and cook for around 1 hour, until the chicken is tender and fully cooked.

When it came to serving our chicken casserole, I was thinking of making some mashed potatoes. To make it easier on myself though, I decided to make boiled potatoes instead with some green beans on the side.

When the boiled potatoes were ready I crushed them slightly and seasoned with some fresh Rosemary. The Rosemary went really well with the Schwartz Chicken Casserole too as it’s actually one of the ingredients in the recipe mix. Some of the other herbs included in the recipe mix are: Sage, Garlic and Oregano – these are some of my favourite herbs to combine when cooking too, as the combination of smells reminds me of a roast dinner, haha.

We all really enjoyed eating the chicken casserole – even hubby did and he had his reheated after he got in from work as he worked late! We found it to not only be tasty, but it was lovely and filling – plus it warmed us all up in the cold Autumn weather. Overall, it took around 10 minutes to prep, including browning the vegetables and the chicken – 1 hour in the oven and not long to fill our bellies! Perfect really!
