Quick Biscuit Recipe


Something I mentioned that we enjoy doing when we’re stuck indoors is baking biscuits. This is our quick and easy recipe and how to make them.

The last time we made them I didn’t have enough ingredients, so I just halved the recipe as this recipe is meant to make 24 biscuits.

Ingredients:
200g unsalted softened butter
200g golden caster sugar
1 large egg
1/2 tsp vanilla extract
400g plain flour
Method:
Preheat your oven to 200C/180C fan/gas mark 6.
Line a baking sheet/tray with greaseproof/baking paper.
In a bowl, beat the butter until it’s a creamy texture, either by hand or using an electric mixer.
Beat in the sugar, then add the egg and the vanilla extract.
Finally, add the flour to make a dough. If the dough still feels sticky then add more flour until it stops being sticky.

Things not to do: if you try to soften the butter in the microwave, try not to let it melt like I did as I ended up needing SO much more flour.

When you have your dough ready, you can start pulling off pieces of dough to roll out. I rolled pieces out so they were just a bit thicker than a pound coin and used a variety of different shaped cutters to make them more fun.
Bake them for around 8-10minutes, or until they’re just going golden brown around the edges. Leave them to cool for 5 minutes before decorating and eating!

Of course I didn’t manage to take any photos of them after we baked them – they were gone too fast!
